Opened in 1970, the restaurant has been run by four generations of the same family and maintains the tradition of preparing Madrid "cocido" (a kind of stew), cooked slowly over a holm oak charcoal fire and served in individual earthenware pots. This age-old culinary technique involves a number of technical difficulties, but, despite this, and thanks to endeavours of the kitchen staff, the result is truly formidable after four long hours of preparation. La Bola is one of the best restaurants serving traditional Castilian cuisine.
